Yamaya Sohonten opened in 2023 as a flagship store dedicated to sincerely engaging with Kyushu ingredients and food culture while pursuing hospitality through food. With the rising share of inbound visitors among its customers, the company has recognized growing demand for a refined, distinctly Japanese morning experience. In response, Yamaya will extend the value of its flagship store into the morning hours by launching breakfast at the kappo-style restaurant Yamaya Sohonten Zen. The concept is “a tray to prepare the Hakata morning.” Viewing morning as a time for recovery, breathing space, and restarting, the meal begins with a Yusanche lacto-fermented vegetable drink containing LP-17 lactic acid bacteria and rice porridge to gently awaken the body. Guests can then enjoy Yamaya’s signature freshly prepared mentaiko and dishes made with carefully selected Kyushu ingredients, creating a breakfast that helps restore balance from within. Guests can dine while overlooking the seasonal courtyard of Yamaya Sohonten, enjoying the soft morning light and the quiet movement of nature.
