The highland agriturismo resort RISONARE Nasu will offer a summer-only dinner course at its main dining restaurant, OTTO SETTE NASU, from June 21 to September 15, 2026. The eight-course dinner combines seasonal summer ingredients such as flower zucchini, young sweetfish and cucumber with techniques from the regional cuisine of Tuscany, Italy. The concept of OTTO SETTE NASU is “Regione × Regione,” meaning “region × region” in Italian. The restaurant serves Tuscan regional cuisine using ingredients familiar to Nasu Town in Tochigi Prefecture. Located in an area known for agricultural landscapes and dairy farming, the resort positions itself as an agriturismo resort centered on experiences connected to local production, offering dining and activities that make generous use of local vegetables and dairy products. Wine pairings centered on carefully selected wines are also available. Highlights from the summer dinner course include the cold appetizer “Farm Pinzimonio,” the pasta dish “Fedelini with Young Sweetfish and Cucumber,” and the meat dish “Beef Arrosto.” The appetizer features seasonal vegetables harvested from the resort’s Agri Garden and the Nasu area, along with local cheese and Yashio trout. The pasta pairs delicate fedelini with a refreshing cucumber sauce and young sweetfish, with additional cucumber-genovese sauce and uruka, a salted preparation of sweetfish innards. The main dish features medium-rare roasted beef served with flower zucchini and fried potatoes; the zucchini blossom is filled with smoked scamorza cheese and served with a sauce made with black olives and tamari-pickled shiso. The OTTO SETTE NASU summer dinner course is available from June 21 to September 15, 2026.
