Matsudo City's specialty, 'Yagiri Green Onions', owes its delicious taste to the traditional 'crop rotation' method involving spring cabbages, which are currently in season. Yasukawa Farm in the Yagiri district alternates between planting green onions and cabbages to maintain a healthy soil environment, shipping 7,000 cases of cabbages annually. Around May 20th, the farm transitions between two distinct cabbage varieties: 'Seishun' (Youth) and 'Hatsukoi' (First Love). The 3rd-generation farm owner, Koichi Yasukawa, recommends eating the spring cabbage raw in a shredded salad to best enjoy its natural sweetness.
