Standard Santoku knives are about 180mm, Gyuto knives are even longer, and Pety knives are around 120-130mm. Sakura considered all of these to be either too long or too short for a "single knife used daily at home." The result of pursuing a length that could handle most kitchen tasks, such as chopping vegetables, slicing meat, and peeling fruit, with good maneuverability is this 155mm blade. The phrase "A Little Long, A Little Short" is not an apology for a flaw, but rather represents the dimensions arrived at after optimizing for home cooking. ■ From the Hands of Artisans in Seki City, Gifu Prefecture, Each with Unique Wood Grain The blade uses a three-layer steel with AUS-10 stainless steel as the core material. Its hardness is approximately HRC 60, balancing long-lasting sharpness with ease of re-sharpening.
