It is widely popular among Kure citizens as a beloved local flavor that has been cherished for many years. Although called 'Reimen' (chilled noodles), it differs from typical Reimen and is more akin to 'Hiyashi Chuka' (Japanese cold ramen). Compared to standard 'Hiyashi Chuka,' it features the following characteristics: ◆ Thick, Flat Noodles It uses flat noodles, which are considered unusual for Hiyashi Chuka. The distinctive texture allows the noodles to easily absorb the soup, and they are served flat to ensure the soup's flavor is thoroughly infused into the noodles. ◆ Soup A sweet and spicy soup with a distinct flavor of sesame oil and chili peppers, unique to Kure Reimen.
